    Ingredients:

    1 cup couscous

    1 cup boiling water

    1 can (15 oz) chickpeas, drained and rinsed

    1/2 cup cucumber, diced

    1/2 cup cherry tomatoes, halved

    1/4 cup red onion, finely chopped

    1/4 cup fresh mint, chopped

    Directions:

    Place couscous in a large bowl and pour boiling water over it. Cover and let sit for 5-7 minutes until water is absorbed. Fluff with a fork.
