Lime Cilantro Rice
Zesty Lime and Fresh Cilantro Flavored Rice
Ingredients:
1 cup long-grain white rice
2 cups water or chicken broth
1 tablespoon olive oil or butter
1/2 teaspoon salt
1 lime, zested and juiced
1/2 cup fresh cilantro, chopped
1 clove garlic, minced (optional)
Directions:
Rinse the rice under cold water until water runs clear to remove excess starch.
In a medium saucepan, heat olive oil or butter over medium heat. Add minced garlic if using and sauté for 30 seconds until fragrant.
Add the rice and salt, stirring to coat the grains in oil.
Pour in the water or chicken broth and bring to a boil.
Reduce heat to low, cover, and simmer for 15-18 minutes, or until the rice is tender and liquid is absorbed.
Remove from heat and let it sit, covered, for 5 minutes.
Fluff the rice with a fork and stir in the lime zest, lime juice, and chopped cilantro.
Serve warm as a fresh, tangy side dish.
