Brazilian Feijoada – Black Bean & Pork Stew
Brazil’s national dish, Feijoada is a robust stew of black beans simmered with various pork cuts — rich, smoky, and traditionally served with rice, oranges, and collard greens.
Ingredients (Serves 6–8):
* 500g black beans (soaked)
* 300g pork shoulder, cubed
* 200g chorizo or linguiça sausage, sliced
* 200g pork ribs
* 1 onion, chopped
* 3 cloves garlic, minced
* 2 bay leaves
* Salt, black pepper, oil
Instructions:
1. Brown all meats in oil, then set aside.
2. In a large pot, sauté onion and garlic. Add beans, bay leaves, and meat.
3. Cover with water and simmer for 2–3 hours until everything is tender.
4. Season and serve with rice, orange slices, and sautéed greens.
Brazilian Tip:
