Za’atar Tahini Sauce
Creamy Za’atar-Spiced Tahini Sauce with Lemon and Garlic
Ingredients:
1/2 cup tahini (sesame paste)
1/3 cup cold water (plus more as needed)
2 tablespoons fresh lemon juice
1 clove garlic, finely minced or grated
1 tablespoon za’atar spice blend
Salt, to taste
Optional: 1 teaspoon olive oil for drizzling
Directions:
In a mixing bowl, whisk tahini and lemon juice together. The mixture may seize and thicken — that’s normal.
Gradually whisk in cold water, a little at a time, until smooth and pourable.
Stir in garlic, za’atar, and salt. Taste and adjust seasoning as needed.
Drizzle with a bit of olive oil if desired.
Serve immediately or store in the fridge for up to 5 days. Re-whisk before using.
