Spicy Peanut Noodles with Edamame
Ingredients:
- 8 oz rice noodles
- 1 cup edamame (shelled)
- 1/2 cup peanut butter
- 3 tbsp soy sauce
- 2 tbsp sesame oil
- 1 tbsp sriracha (adjust to taste)
- 2 cloves garlic (minced)
- 1 tsp ginger (grated)
- 1 tbsp lime juice
- 1/4 cup green onions (sliced)
- 1 tbsp sesame seeds (for garnish)
Preparation Steps:
1. Cook the rice noodles according to package instructions. Drain and set aside.
2. In a bowl, mix peanut butter, soy sauce, sesame oil, sriracha, minced garlic, grated ginger, and lime juice until smooth.
3. In a large skillet over medium heat, add the cooked noodles and edamame.
4. Pour the peanut sauce over the noodles and toss until well combined.
5. Cook for an additional 2-3 minutes, stirring frequently, until heated through.
6. Remove from heat and garnish with sliced green onions and sesame seeds.
7. Serve warm and enjoy!
