Fresh Avocado Salad with Tomato, Cucumber, and Lime Vinaigrette
Ingredients:
2 ripe avocados, diced
1 cup cherry tomatoes, halved
1 cucumber, diced
1/4 red onion, thinly sliced
1/4 cup chopped fresh cilantro
Juice of 1 lime
2 tablespoons extra virgin olive oil
Salt and black pepper to taste
Directions:
