    Refreshing Creamy Cucumber and Yogurt Cold Soup

    Ingredients:

    3 large cucumbers, peeled and chopped

    1 cup Greek yogurt

    1/2 cup sour cream

    1 small garlic clove, minced

    2 tablespoons fresh dill, chopped

    1 tablespoon fresh lemon juice

    1/4 teaspoon salt (or to taste)

    1/4 teaspoon black pepper

    1/2 cup cold water or vegetable broth (optional for thinning)

    Fresh mint leaves for garnish

    Directions:

    In a blender or food processor, combine the cucumbers, Greek yogurt, sour cream, garlic, dill, lemon juice, salt, and pepper.

    Blend until smooth and creamy. If the soup is too thick, add cold water or vegetable broth a little at a time until desired consistency is reached.

    Chill the soup in the refrigerator for at least 1 hour before serving to let the flavors meld and the soup become nicely cold.

    Serve garnished with fresh mint leaves and a sprinkle of dill.
