Irish Seafood Chowder
A creamy, hearty soup from Ireland, packed with fresh seafood like salmon, cod, and shellfish, combined with potatoes, leeks, and cream.
Ingredients (Serves 4):
* 200g salmon, diced
* 200g cod, diced
* 150g cooked shrimp
* 1 onion, chopped
* 1 leek, sliced
* 3 potatoes, diced
* 500ml fish stock
* 200ml cream
* 2 tbsp butter
* Fresh parsley, salt, pepper
Instructions:
1. Melt butter in a large pot, sauté onion and leek until soft.
2. Add potatoes and fish stock, simmer until potatoes are tender.
3. Add salmon, cod, and shrimp; cook gently until fish is cooked through.
4. Stir in cream, season with salt and pepper.
5. Garnish with chopped parsley and serve with crusty bread.
