Vanilla Éclair with Pastry Cream

- 1 cup water
- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 4 large eggs
- 1/4 teaspoon salt
- 2 cups milk
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 1 teaspoon vanilla extract
- Powdered sugar (for dusting)
- 1 cup heavy cream (for whipped topping)
Preparation Steps:
1. Preheat your oven to 400°F (200°C).
2. In a saucepan, bring water and butter to a boil.
3. Stir in flour and salt until the mixture forms a ball; remove from heat.
4. Beat in eggs one at a time until smooth.
5. Pipe the dough onto a baking sheet in 4-inch lengths.
6. Bake for 20-25 minutes until golden and puffed; cool completely.
7. In another saucepan, whisk together milk, sugar, cornstarch, and vanilla; heat until thickened.
8. Remove from heat and let it cool; whisk occasionally to prevent a skin.
9. Slice éclairs in half lengthwise and fill with pastry cream.
10. Top with whipped cream and dust with powdered sugar.
