Sweet Chilli Sauce
Homemade Sweet Chilli Sauce with Garlic and Red Pepper Flakes
Ingredients:
1/2 cup rice vinegar
1/2 cup water
1/2 cup granulated sugar
2 tablespoons fish sauce (or soy sauce for vegetarian)
2 cloves garlic, minced
1 tablespoon finely chopped red chili (or red pepper flakes to taste)
1 tablespoon ketchup (for color and depth)
1 tablespoon cornstarch
2 tablespoons water (for slurry)
Directions:
In a small saucepan, combine rice vinegar, water, sugar, fish sauce, garlic, chili, and ketchup.
Bring to a gentle boil over medium heat, stirring to dissolve the sugar.
In a separate small bowl, mix cornstarch with 2 tablespoons of water to form a slurry.
Once the sauce begins to simmer, add the slurry and stir continuously until the sauce thickens (about 2–3 minutes).
Let it cool slightly before pouring into a clean jar or bottle.
Store in the refrigerator for up to 2 weeks. Shake well before each use.
