Austrian Tafelspitz – Boiled Beef with Root Vegetables

An iconic Viennese dish: tender boiled beef served in its flavorful broth with vegetables, horseradish-apple sauce, and crispy potatoes.

Ingredients (Serves 4):

* 1kg beef topside or brisket
* 2 carrots, sliced
* 1 leek, chopped
* 1 parsnip or celery root, chopped
* 1 onion, halved and charred
* 2 bay leaves
* Salt, pepper
* To serve: grated horseradish, applesauce, fried potatoes

Instructions:

1. Simmer beef in water with salt and bay leaves. Skim foam.
2. Add vegetables and charred onion. Simmer gently for 2.5–3 hours.
3. Remove beef, slice. Serve in broth with vegetables and sides.

Austrian Tip:
Tafelspitz is best enjoyed with a spoonful of freshly grated horseradish mixed with applesauce.
