Icelandic Plokkfiskur – Mashed Fish & Potato Casserole
A Nordic comfort dish, Plokkfiskur combines flaked white fish with creamy mashed potatoes and béchamel sauce, often served with dark rye bread and butter.
Ingredients (Serves 4):
* 400g white fish (cod, haddock), poached and flaked
* 500g potatoes, boiled and mashed
* 1 small onion, finely chopped
* 30g butter
* 2 tbsp flour
* 300ml milk
* Salt, white pepper, parsley
Instructions:
1. Make a roux with butter and flour, whisk in milk to form a smooth sauce.
2. Add onion and cook until tender.
3. Stir in mashed potatoes and flaked fish. Mix until heated through.
4. Season with salt, pepper, and garnish with parsley.
