Ingredients:
400 g chicken thighs, chopped
1/3 cup mole sauce
1/2 cup pickled red onions
1 cup shredded Monterey Jack or mozzarella
1 roll pizza dough
Instructions:
1⃣ Cook chicken, mix with mole sauce.
2⃣ Press dough into pan, layer chicken, cheese, and pickled onions.
3⃣ Bake at 425°F (220°C) for 20–25 min until golden and bubbly.
