Seared Beef with Garlic Herb Compound Butter

Ingredients:

1 lb ribeye, sirloin, or filet mignon steak (choose your favorite cut)

Salt and freshly ground black pepper, to taste

1 tablespoon olive oil

For the Herb Butter:

4 tablespoons unsalted butter, softened

1 teaspoon garlic, minced

1 tablespoon fresh parsley, finely chopped

1 teaspoon fresh rosemary, finely chopped

1 teaspoon fresh thyme, finely chopped

1/2 teaspoon lemon zest

Pinch of sea salt

Directions:

In a small bowl, mix softened butter with garlic, parsley, rosemary, thyme, lemon zest, and sea salt. Transfer onto a sheet of parchment paper and roll into a log. Chill in the fridge for at least 30 minutes.

Season steaks generously with salt and black pepper.

Heat olive oil in a cast iron skillet over high heat until just smoking. Sear steaks for 3–4 minutes per side (or to desired doneness). Let rest for 5 minutes.

Slice a round of the chilled herb butter and place it on top of each hot steak just before serving. Let it melt over the beef and infuse it with rich flavor.
