Spicy Beef and Corn Pasta

Fiery Beef and Sweet Corn Pasta in a Smoky Tomato Cream Sauce

Ingredients:

12 oz penne or rigatoni

1 tablespoon olive oil

1 lb ground beef

1 small onion, chopped

2 garlic cloves, minced

1 cup corn kernels (fresh, frozen, or canned)

1/2 teaspoon smoked paprika

1 teaspoon chili flakes (adjust to taste)

1/2 teaspoon cumin

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup tomato sauce

1/2 cup heavy cream

1/4 cup grated Parmesan

Fresh cilantro or parsley, chopped (for garnish)

Directions:

Cook pasta according to package instructions until al dente. Drain and set aside.

In a large skillet, heat olive oil over medium heat. Add chopped onion and cook until softened, about 3 minutes.

Add garlic and sauté for 30 seconds. Add ground beef and cook until browned, breaking it up with a spoon.

Stir in corn, smoked paprika, chili flakes, cumin, salt, and black pepper. Cook for 3–4 minutes.

Pour in tomato sauce and cream. Stir well and simmer for 4–5 minutes until slightly thickened.

Add cooked pasta to the skillet and toss to coat evenly in the sauce.

Sprinkle with Parmesan and garnish with fresh herbs. Serve hot.
