Easy Mongolian Chicken

Quick and Savory Mongolian-Style Chicken Stir-Fry

Ingredients:

1 lb (450g) boneless, skinless chicken thighs or breasts, thinly sliced

2 tablespoons vegetable oil

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

1/2 cup soy sauce

1/4 cup brown sugar

1/4 cup water

1/2 teaspoon red pepper flakes (optional)

3 green onions, sliced (white and green parts separated)

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

Directions:

Heat vegetable oil in a large skillet or wok over medium-high heat. Add chicken slices and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.

In the same pan, add a little more oil if needed, sauté garlic, ginger, and white parts of green onions until fragrant, about 1-2 minutes.

Stir in soy sauce, brown sugar, water, and red pepper flakes (if using). Bring to a simmer.

Add the cornstarch slurry to the sauce and stir until it thickens slightly, about 1-2 minutes.

Return the cooked chicken to the pan, toss to coat in the sauce and heat through.

Garnish with the green parts of the sliced green onions before serving.
