Sweet & Spicy Homemade Pickled Beets

    Ingredients:

1 1/2 lbs fresh beets, trimmed and scrubbed

    1 cup apple cider vinegar

    1/2 cup water

    1/2 cup granulated sugar

    1/2 tsp ground cinnamon

    1/4 tsp ground cloves

    1/4 tsp ground allspice

    1/2 tsp salt

1 small red onion, thinly sliced (optional)

    Directions:

Place the beets in a large pot and cover with water. Bring to a boil and cook for 30–40 minutes, or until fork-tender.

Drain the beets and let them cool enough to handle. Peel and slice into 1/4-inch rounds or wedges.

In a saucepan, combine the vinegar, water, sugar, cinnamon, cloves, allspice, and salt. Bring to a gentle simmer, stirring until the sugar dissolves.

Place the sliced beets (and red onion if using) in a sterilized glass jar.

Pour the hot brine over the beets, making sure they are completely submerged.

Let cool to room temperature, then seal with a lid and refrigerate for at least 24 hours before eating.

Best enjoyed within 2–3 weeks for peak flavor and texture.

Captured by astronaut Soichi Noguchi aboard the International Space Station (ISS), this stunning image shows Japan’s iconic Mount Fuji rising like a beacon through the clouds.

At 400+ km above Earth, the ISS offers a rare perspective of our planet’s natural wonders — and this is one of the most breathtaking.

  • Rendezvous in the stars — 1966.

Gemini 10, piloted by astronauts John Young and Michael Collins, approached and docked with the Agena Target Vehicle in Earth orbit — a daring maneuver that tested the future of space missions.
After a successful link-up, they fired Agena’s powerful engine and soared to a record-breaking altitude, pushing the boundaries of how far humans had ever flown from Earth.

This mission paved the way for future Moon landings — proving precision, courage, and the power of teamwork in space.

  • A new hydrogen-powered car is making headlines for delivering what electric vehicles still struggle to match: ultra-fast refueling and long-distance range. The vehicle claims to fully refuel in just 5 seconds and can travel up to 1,500 kilometers—a potential game-changer in clean transportation.

Unlike battery-electric cars that require hours of charging, this hydrogen fuel cell car emits only water vapor, making it one of the most eco-friendly zero-emission solutions available.

Hydrogen vehicles convert hydrogen into electricity using a fuel cell, offering high energy density and minimal downtime.

In contrast to battery-electric vehicles, hydrogen fuel cells are:

    - Faster to refuel

    - Capable of longer continuous operation

    - Lighter over long distances due to lower storage weight

With fuel cell buses already deployed in cities like Beijing, Tokyo, and Seoul, this car hints at a hydrogen-powered future beyond public transit—one where consumers don’t sacrifice speed or convenience for sustainability.
