    Crispy Beef and Potato Tacos with Smoky Spices and Fresh Toppings

    Ingredients:

    1 tablespoon vegetable oil

    1 small onion, diced

    2 cloves garlic, minced

    1/2 lb (225g) ground beef

    1 teaspoon ground cumin

    1/2 teaspoon smoked paprika

    1/2 teaspoon chili powder

    Salt and pepper to taste

    1 medium russet potato, peeled and diced small

    1/2 cup water or beef broth

    8 small corn tortillas

    1/2 cup shredded cheddar or Monterey Jack cheese (optional)

    Toppings: shredded lettuce, chopped tomato, sour cream, hot sauce, fresh cilantro, lime wedges

    Directions:

    Heat oil in a skillet over medium heat. Add onion and cook for 3–4 minutes until translucent. Stir in garlic and cook for 1 minute.

    Add ground beef and cook, breaking it up with a spoon, until browned, about 5–6 minutes.

    Stir in cumin, paprika, chili powder, salt, and pepper. Add diced potatoes and water or broth.

    Cover and simmer on low for 15–20 minutes, stirring occasionally, until potatoes are tender and the mixture has thickened.

    Warm tortillas in a dry skillet or microwave until soft and pliable.

    Spoon the beef and potato filling into each tortilla. Top with cheese (if using) and other desired toppings.

    Serve immediately with lime wedges and extra hot sauce on the side.

    Ingredients:

    1 lb (450g) beef sirloin or rump steak, sliced into strips

    1 tablespoon olive oil

    2 cloves garlic, minced

    1 teaspoon fresh thyme (or 1/2 tsp dried)

    Salt and black pepper, to taste

    1 tablespoon butter

    For the garlic mash:

    2 lbs (900g) potatoes, peeled and chopped

    4 cloves garlic, peeled

    1/2 cup milk (warm)

    1/4 cup butter

    Salt and pepper, to taste

    Chopped parsley for garnish (optional)

    Directions:

    Boil potatoes and garlic cloves in salted water until tender, about 15–20 minutes.

    Drain and mash with warm milk, butter, salt, and pepper until smooth and creamy. Keep warm.

    Meanwhile, heat olive oil in a skillet over medium-high heat. Add beef strips and sear for 2–3 minutes until browned.

    Add minced garlic, thyme, and butter to the pan, cooking another 1–2 minutes while spooning melted butter over the beef.

    Season with salt and pepper to taste.
