Cassoulet
Ingredients:
- 1 lb white beans (dried)
- 4 cups chicken broth
- 1 lb pork sausage, sliced
- 1 lb duck legs, skin on
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 tablespoon tomato paste
- 2 teaspoons dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 1 cup breadcrumbs
- 2 tablespoons olive oil
Preparation Steps:
1. Soak the white beans in water overnight, then drain.
2. In a large pot, sauté the onion, garlic, carrots, and celery in olive oil until soft.
3. Add the sausage and duck legs to the pot; cook until browned.
4. Stir in the tomato paste, thyme, bay leaf, salt, and pepper.
5. Add the chicken broth and soaked beans; bring to a boil.
6. Reduce heat, cover, and simmer for about 1.5 hours, or until beans are tender.
7. Preheat your oven to 375°F (190°C).
8. Transfer the cassoulet to a baking dish and top with breadcrumbs.
9. Bake for 30 minutes or until the top is golden brown.
