Creamy Mushroom Mac & Cheese
Decadent Creamy Mushroom Macaroni and Cheese
Ingredients:
8 oz elbow macaroni
2 tablespoons unsalted butter
1 cup mushrooms, sliced (button or cremini)
2 tablespoons all-purpose flour
2 cups whole milk
1 cup shredded sharp cheddar cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon smoked paprika (optional)
Fresh parsley, chopped (for garnish)
Directions:
Cook macaroni according to package instructions until al dente. Drain and set aside.
In a large skillet, melt butter over medium heat. Add mushrooms and sauté until tender and golden, about 5-7 minutes. Remove from heat and set aside.
In a medium saucepan, melt 2 tablespoons of butter over medium heat. Whisk in flour and cook for 1-2 minutes to form a roux.
Gradually whisk in the milk, stirring constantly until the sauce thickens, about 5-7 minutes.
Remove from heat and stir in cheddar, mozzarella, and Parmesan cheeses until melted and smooth.
Season cheese sauce with garlic powder, salt, pepper, and smoked paprika if using.
Fold the cooked macaroni and sautéed mushrooms into the cheese sauce until well combined.
Garnish with chopped fresh parsley and serve warm.
