Fiery Tamarind and Chili Spiced Soup with Tangy Depth

    Ingredients:

4 cups vegetable or chicken broth

    1/2 cup tamarind paste

2 tablespoons oil (vegetable or olive)

    1 medium onion, chopped

    3 cloves garlic, minced

    1-inch piece fresh ginger, grated

2-3 fresh red chilies, sliced (adjust to taste)

    1 medium tomato, chopped

1 tablespoon fish sauce (optional for non-vegetarian)

    1 tablespoon soy sauce

    1 teaspoon ground cumin

    1/2 teaspoon turmeric powder

    1/2 teaspoon smoked paprika

    Salt to taste

    Fresh cilantro for garnish

    Juice of 1 lime

    Directions:

Heat oil in a large pot over medium heat. Add onion, garlic, and ginger, sauté until softened and fragrant, about 4-5 minutes.

Add the sliced red chilies and chopped tomato, cook for another 3 minutes until tomatoes break down.

Stir in cumin, turmeric, and smoked paprika, cooking for 1 minute to release the spices’ aroma.

Pour in the broth and bring to a simmer.

Whisk tamarind paste with a little warm water to loosen, then add to the pot.

Add fish sauce (if using) and soy sauce, season with salt to taste. Let simmer gently for 15-20 minutes.

Remove from heat and stir in lime juice.

Garnish with fresh cilantro before serving.
