    Pineapple and Coconut Salad

    Tropical Pineapple Coconut Salad with Lime and Mint

    Ingredients:

    2 cups fresh pineapple, diced

    1/2 cup shredded coconut (toasted or unsweetened)

    1/2 cup cucumber, diced

    1/4 cup red onion, thinly sliced

    1/4 cup fresh mint leaves, chopped

    Zest of 1 lime

    Directions:
