  • Old Charleston-Style Shrimp and Grits

    Classic Charleston Shrimp and Creamy Stone-Ground Grits

    Ingredients:

    1 cup stone-ground grits

    4 cups water or chicken broth

    1 cup sharp cheddar cheese, shredded

    4 tablespoons butter

    Salt and pepper to taste

    1 lb fresh shrimp, peeled and deveined

    6 slices bacon, chopped

    1 small onion, finely chopped

    1 green bell pepper, diced

    2 cloves garlic, minced

    1 teaspoon smoked paprika

    1/2 teaspoon cayenne pepper (optional)

    1/2 cup chicken broth

    2 tablespoons fresh parsley, chopped

    Juice of 1 lemon

    Directions:

    Bring water or chicken broth to a boil in a large saucepan. Slowly whisk in grits. Reduce heat to low, cover, and simmer for about 20-25 minutes, stirring occasionally until creamy and tender.

    Stir in butter and shredded cheddar cheese into the cooked grits. Season with salt and pepper. Keep warm.

    In a large skillet, cook chopped bacon over medium heat until crispy. Remove bacon pieces and set aside, leaving the bacon fat in the pan.

    Add onion and green bell pepper to the skillet and sauté for 4-5 minutes until softened. Add garlic, smoked paprika, and cayenne pepper and cook for another minute until fragrant.

    Add shrimp to the skillet and cook for 3-4 minutes until pink and cooked through. Pour in chicken broth and lemon juice; simmer for 2 minutes.

    Stir the cooked bacon back into the shrimp mixture. Remove from heat.

    To serve, spoon a generous portion of cheesy grits into bowls, top with the shrimp and bacon mixture, and garnish with chopped parsley.
