Fresh and Crunchy Asian-Inspired Chicken Salad with Sesame Ginger Dressing

Ingredients:

2 cups cooked chicken breast, shredded or sliced

4 cups mixed greens (lettuce, spinach, arugula)

1 cup shredded red cabbage

1 cup shredded carrots

1 cup cucumber, thinly sliced

1/2 cup sliced bell peppers (red or yellow)

1/4 cup chopped green onions

1/4 cup chopped fresh cilantro

1/4 cup roasted peanuts or cashews, chopped

2 tablespoons toasted sesame seeds

For the Dressing:

3 tablespoons soy sauce

2 tablespoons rice vinegar

1 tablespoon honey or maple syrup

1 tablespoon sesame oil

1 teaspoon grated fresh ginger

1 clove garlic, minced

Juice of 1 lime

Optional: 1 teaspoon sriracha for heat

Directions:

In a small bowl, whisk together all dressing ingredients until well combined.

In a large salad bowl, combine mixed greens, cabbage, carrots, cucumber, bell peppers, green onions, and cilantro.

Add the shredded chicken on top of the salad.

Drizzle dressing over the salad and toss gently to coat everything evenly.

Sprinkle roasted nuts and toasted sesame seeds on top before serving.
