    Ingredients:

    3 cups cooked chicken breast, shredded or chopped

    4 cups Napa cabbage, thinly sliced

    2 cups shredded carrots

    1 cup red bell pepper, thinly sliced

    1 cup green onions, chopped

    1/2 cup chopped fresh cilantro

    1/2 cup toasted sliced almonds or chopped peanuts

    1/4 cup crispy chow mein noodles (optional)

    For the Dressing:

    3 tablespoons soy sauce

    2 tablespoons rice vinegar

    1 tablespoon sesame oil

    1 tablespoon honey or brown sugar

    1 teaspoon grated fresh ginger

    1 clove garlic, minced

    1 teaspoon toasted sesame seeds

    Optional: 1 teaspoon chili garlic sauce for heat

    Directions:

    In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, ginger, garlic, and sesame seeds until well combined.

    In a large salad bowl, combine Napa cabbage, shredded chicken, carrots, bell pepper, green onions, and cilantro.

    Pour dressing over the salad and toss thoroughly to coat all ingredients.
