Spanish Costillas de Cerdo al Horno â Roasted Pork Ribs
A rustic Spanish dish of marinated pork ribs baked until fall-off-the-bone tender, infused with paprika, garlic, and herbs.
Ingredients (Serves 4):
* 1.5kg pork ribs
* 3 cloves garlic, minced
* 2 tsp smoked paprika
* 1 tsp dried oregano
* œ tsp cumin
* 2 tbsp olive oil
* Salt, pepper
* Lemon wedges for serving
Instructions:
1. Mix garlic, spices, olive oil, salt, and pepper into a marinade. Rub all over ribs.
2. Marinate at least 2 hours (or overnight).
3. Preheat oven to 170°C (340°F). Wrap ribs in foil and bake for 2 hours.
4. Uncover, raise heat to 220°C (430°F), and roast another 15â20 mins to caramelize.
5. Serve with lemon wedges and rustic bread.

Often paired with roasted peppers or a glass of red Rioja wine.
