Beef and Balsamic Glaze

Pan-Seared Beef Medallions with Sweet Balsamic Glaze Reduction

Ingredients:

1 1/2 lbs beef tenderloin medallions or sirloin steaks, about 1-inch thick

Salt and freshly ground black pepper, to taste

1 tablespoon olive oil

3 cloves garlic, minced

1/2 cup balsamic vinegar

2 tablespoons brown sugar

2 tablespoons unsalted butter

1 teaspoon fresh rosemary, finely chopped (optional)

Fresh parsley, chopped (for garnish)

Directions:

Pat the beef dry and season both sides with salt and pepper.

Heat olive oil in a heavy skillet over medium-high heat. Sear beef medallions for 3–4 minutes per side for medium-rare (or to desired doneness). Transfer to a plate and tent with foil.

Lower heat to medium. Add minced garlic to the same skillet and sauté for 30 seconds.

Pour in balsamic vinegar and add brown sugar. Stir and let it simmer for 5–7 minutes, until slightly thickened.

Add butter and rosemary (if using), stirring until the glaze is smooth and glossy.

Return the beef to the pan and spoon glaze over each piece for 1–2 minutes.

Serve warm, garnished with chopped parsley.
