    Ingredients:

    2 medium sweet potatoes, peeled and cubed

    6 cups kale, chopped and stems removed

    1 tablespoon apple cider vinegar

    1/2 cup cooked quinoa (optional, for extra protein)

    1/3 cup dried cranberries

    1/4 cup toasted pumpkin seeds (pepitas)

    1/4 cup crumbled feta cheese

    For the Maple Dijon Vinaigrette:

    2 tablespoons olive oil

    1 tablespoon apple cider vinegar

    1 tablespoon maple syrup

    1 teaspoon Dijon mustard

    Salt and black pepper, to taste

    Directions:

    Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Toss cubed sweet potatoes with 1 tablespoon olive oil, salt, and pepper. Spread evenly on the baking sheet and roast for 25–30 minutes, flipping halfway through, until golden and tender.
