    Crispy Salmon Bites Drizzled with Creamy Bang Bang Sauce

    Ingredients:

    1 lb skinless salmon fillet, cut into 1-inch cubes

    1 cup buttermilk

    1 cup all-purpose flour

    1 cup panko breadcrumbs

    1/2 cup cornstarch

    1 tsp garlic powder

    1/2 tsp smoked paprika

    Salt and black pepper to taste

    Vegetable oil, for frying

    For the Bang Bang Sauce:

    1/2 cup mayonnaise

    2 tbsp sweet chili sauce

    1 tbsp sriracha (adjust to heat preference)

    1 tsp honey

    1 tsp rice vinegar

    Directions:

    In a bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar. Set aside.

    Marinate salmon pieces in buttermilk for at least 20 minutes.

    In a shallow bowl, mix flour, cornstarch, garlic powder, paprika, salt, and pepper.

    Dredge marinated salmon in the flour mixture, then coat with panko breadcrumbs.

    Heat vegetable oil in a deep skillet over medium-high heat.

    Fry salmon bites in batches until golden and crispy, about 2-3 minutes per side.

    1/4 cup cornstarch

    2 tablespoons vegetable oil

    4 garlic cloves, minced

    1 tablespoon fresh ginger, grated

    1/2 cup low-sodium soy sauce

    1/2 cup water

    1/2 cup brown sugar, packed

    1 teaspoon rice vinegar (optional)

    1/4 teaspoon red pepper flakes (optional)

    2 green onions, chopped (for garnish)

    Sesame seeds (for garnish)

    Directions:

    Toss the sliced chicken in cornstarch until evenly coated. Shake off any excess.
