    Hearty and Healing Cabbage Vegetable Soup

    Ingredients:

    1 tablespoon olive oil

    1 onion, diced

    3 garlic cloves, minced

    3 carrots, peeled and sliced

    3 celery stalks, sliced

    1/2 head of green cabbage, chopped

    1 zucchini, chopped

    1 can (14.5 oz) diced tomatoes

    6 cups vegetable broth (or chicken broth)

    1 teaspoon dried thyme

    1 teaspoon dried oregano

    1/2 teaspoon paprika

    Salt and pepper to taste

    Juice of 1/2 lemon (optional for brightness)

    Fresh parsley, chopped (for garnish)

    Directions:

    In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until translucent, about 3–4 minutes.

    Add carrots and celery. Cook for another 4–5 minutes until slightly softened.

    Stir in cabbage, zucchini, diced tomatoes (with juice), and vegetable broth.

    Season with thyme, oregano, paprika, salt, and pepper. Bring to a boil.

    Reduce heat and let simmer for 25–30 minutes, until vegetables are tender and flavors meld together.

    Taste and adjust seasoning if needed. Stir in lemon juice, if using.

    Serve hot, garnished with fresh parsley.

    Cheesy Lasagna Roll-Ups with Ricotta and Marinara

    Ingredients:

    12 lasagna noodles

    2 cups ricotta cheese

    1 egg

    1½ cups shredded mozzarella cheese, divided

    1/2 cup grated Parmesan cheese

    2 cups fresh spinach, chopped and sautéed

    2 cups marinara sauce

    1/2 tsp garlic powder

    1/2 tsp dried basil

    Salt and pepper to taste

    Fresh basil or parsley for garnish (optional)

    Directions:
