    Cheesy Baked Beef and Chile Rellenos Casserole

    Ingredients:

    1 lb ground beef

    6 large poblano or Anaheim chiles, roasted, peeled, and seeded

    1 medium onion, chopped

    3 cloves garlic, minced

    1 cup cooked rice

    1 (10 oz) can diced tomatoes with green chilies

    1 teaspoon cumin

    1 teaspoon chili powder

    1/2 teaspoon smoked paprika

    Salt and pepper to taste

    2 cups shredded Monterey Jack or mozzarella cheese

    1/2 cup sour cream

    2 tablespoons olive oil

    Directions:

    Preheat oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.

    Roast the chiles over a gas flame or under the broiler until the skins blister. Place them in a sealed plastic bag for 10 minutes, then peel off the skins, remove seeds, and set aside.

    In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic and sauté until translucent, about 3-4 minutes.

    Add ground beef to the skillet and cook until browned. Drain any excess fat.

    Stir in cooked rice, diced tomatoes with chilies, cumin, chili powder, smoked paprika, salt, and pepper. Cook for 5 minutes until flavors meld. Remove from heat.

    Cut each chile into halves or thirds lengthwise. Arrange a layer of roasted chiles on the bottom of the baking dish.

    Spread half of the beef mixture over the chiles, then dollop half of the sour cream evenly. Sprinkle with one cup of shredded cheese.

    Repeat with the remaining chiles, beef mixture, sour cream, and cheese layers.

    Bake uncovered for 25-30 minutes until the cheese is melted and bubbly.

    Let cool slightly before serving.
