Garlic Butter Salmon with Spinach
Ingredients:
- 2 salmon fillets
- 4 tablespoons butter
- 4 cloves garlic, minced
- 5 cups fresh spinach
- Salt and pepper to taste
- Juice of 1 lemon
- Optional: Fresh parsley for garnish
Preparation Steps:
1. Melt 2 tablespoons of butter in a pan over medium heat.
2. Season the salmon fillets with salt and pepper on both sides.
3. Place the salmon fillets in the pan and cook for 4-5 minutes on each side, until golden brown and cooked through.
4. Remove the salmon and set aside.
5. In the same pan, add the remaining butter and minced garlic. Sauté for about 1 minute until fragrant.
6. Add the fresh spinach to the pan and cook until wilted, about 2-3 minutes.
7. Squeeze lemon juice over the spinach and stir well.
8. Return the salmon to the pan, coating with the garlic butter sauce.
9. Serve hot, garnished with fresh parsley if desired.
