    Garlic Butter Shrimp over Creamy Sweet Potato Mash

    Ingredients:

    1 lb (450g) shrimp, peeled and deveined

    2 tablespoons olive oil

    3 garlic cloves, minced

    1 teaspoon smoked paprika

    Salt and pepper to taste

    2 large sweet potatoes, peeled and cubed

    2 tablespoons butter

    1/4 cup milk (or coconut milk for dairy-free option)

    1 tablespoon chopped fresh parsley

    Lemon wedges, for serving

    Directions:

    Boil the sweet potatoes in a pot of salted water until fork-tender, about 12–15 minutes. Drain and return to the pot.

    Add butter and milk to the sweet potatoes. Mash until creamy and smooth. Season with salt and pepper to taste.

    While the potatoes cook, heat olive oil in a skillet over medium heat. Add the garlic and sauté for 30 seconds.

    Add shrimp to the skillet and season with paprika, salt, and pepper. Cook for 2–3 minutes per side, or until pink and cooked through.

    Serve the shrimp over the mashed sweet potatoes. Sprinkle with fresh parsley and a squeeze of lemon juice.

    Ingredients

    8 oz wide rice noodles
    1/2 lb shrimp, peeled and deveined
    1/2 lb ground beef
    4 garlic cloves, minced
    1 tbsp ginger, minced
    3 tbsp soy sauce
    2 tbsp oyster sauce
    1 tbsp hoisin sauce
    1 tbsp chili garlic sauce (adjust to taste)
    1 tsp sesame oil
    2 tbsp vegetable oil
    1 tsp cornstarch (optional, mixed with 2 tbsp water)
    2 green onions, chopped

    Directions

    Cook the rice noodles as per the package instructions. Drain and set aside.
    Heat 1 tbsp of the vegetable oil in a large skillet or wok over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spatula. Push to the side.
    Add the shrimp to the same skillet, cooking until pink and fully done—about 2 minutes per side. Remove shrimp and set aside.
    Add the remaining oil, then stir in garlic and ginger. Sauté for 1–2 minutes until fragrant.
    Mix in soy sauce, oyster sauce, hoisin sauce, chili garlic sauce, and sesame oil. If a thicker sauce is desired, stir in the cornstarch slurry.
    Toss in the cooked noodles, mixing until evenly coated. Return shrimp to the pan, stirring everything together for 2–3 minutes.
