🍗 Grilled Chicken Skewers with Roasted Tomatoes & Tahini Sauce 🍅

Ingredients:

For the Chicken Skewers:

1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
1 tablespoon olive oil
1 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional)
For the Roasted Tomatoes:

1 pint cherry tomatoes
1 tablespoon olive oil
1/2 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
For the Tahini Sauce:

1/4 cup tahini
2 tablespoons lemon juice
1 clove garlic, minced
1/4 cup water
1/4 teaspoon salt
1/4 teaspoon cumin
1/4 teaspoon paprika
Instructions:

Prepare the Chicken Skewers:
In a bowl, combine the chicken cubes, olive oil, paprika, garlic powder, salt, black pepper, and cayenne pepper (if using). Mix well to coat the chicken evenly.
Thread the chicken onto skewers.
Roast the Tomatoes:
Preheat your oven to 400°F (200°C).
On a baking sheet, toss the cherry tomatoes with olive oil, paprika, garlic powder, salt, and black pepper. Spread them out in a single layer.
Roast in the oven for about 15-20 minutes, or until the tomatoes are blistered and tender.
Make the Tahini Sauce:
In a bowl, whisk together tahini, lemon juice, minced garlic, water, salt, cumin, and paprika until smooth. Adjust the consistency with more water if needed.
Grill the Chicken Skewers:
Preheat your grill to medium-high heat. Grill the chicken skewers for about 10-12 minutes, turning occasionally, until fully cooked and no longer pink in the center.
Serve:
Serve the grilled chicken skewers with the roasted tomatoes and drizzle with tahini sauce. Enjoy!
