Recipe: Bacon Jam Burgers

Yields: 4 Burgers Prep Time: 25 minutes Cook Time: 30-40 minutes (includes bacon jam cooking time)

Ingredients:

  • For the Bacon Jam:

    • 1 pound thick-cut bacon, roughly chopped
    • 1 medium yellow onion, finely diced
    • 2 cloves garlic, minced
    • 1/4 cup brown sugar, packed
    • 1/4 cup apple cider vinegar
    • 1/4 cup strong brewed coffee
    • 1 tablespoon maple syrup
    • 1/4 teaspoon smoked paprika
    • Pinch of red pepper flakes (optional, for a little kick)
    • Freshly ground black pepper to taste
  • For the Burgers:

    • 2 pounds ground beef (80/20 blend recommended for flavor)
    • 1 tablespoon Worcestershire sauce
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
  • For Assembly:

    • 4 brioche buns, toasted
    • 4 slices sharp cheddar cheese
    • Arugula or baby spinach
    • Dijon mustard (optional)

Equipment:

  • Large skillet or Dutch oven
  • Mixing bowl
  • Burger press (optional)
  • Grill or cast iron skillet for burgers
  • Spatula

Instructions:

1. Crafting the Bacon Jam (The Star of the Show):

  • In a large skillet or Dutch oven over medium heat, cook the chopped bacon until crispy. Remove the bacon with a slotted spoon and drain on paper towels, reserving about 2 tablespoons of bacon fat in the pan. Set bacon aside.
  • Add the diced onion to the reserved bacon fat in the pan and cook until softened and translucent, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
  • Add the brown sugar, apple cider vinegar, brewed coffee, maple syrup, smoked paprika, red pepper flakes (if using), and pepper to the pan. Stir to combine and bring to a simmer.
  • Reduce the heat to low and let the mixture simmer for about 20-25 minutes, stirring occasionally, until the mixture has thickened and caramelized to a jam-like consistency. Be patient! This is where the magic happens.
  • Return the cooked bacon to the pan and stir to combine. Taste and adjust seasonings as needed. Remove from heat and set aside to cool slightly.

2. Preparing the Burger Patties:

  • In a large mixing bowl, gently combine the ground beef, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Be careful not to overmix, or you'll end up with tough burgers.
  • Divide the mixture into 4 equal portions and form into patties. Use a burger press for uniform patties, or shape them by hand, making a slight indentation in the center of each patty to prevent them from puffing up during cooking.

3. Cooking the Burgers:

  • Preheat your grill or cast iron skillet to medium-high heat.
  • Cook the burger patties for about 4-5 minutes per side for medium doneness, or longer depending on your desired level of doneness.
  • In the last minute of cooking, top each patty with a slice of sharp cheddar cheese and allow it to melt.

4. Assembling the Masterpiece:

  • Spread a thin layer of Dijon mustard (optional) on the bottom bun.
  • Place a handful of arugula or baby spinach on the bottom bun.
  • Top with the cheese-covered burger patty.
  • Spoon a generous amount of bacon jam over the cheese.
  • Place the top bun on top and serve immediately.

Chef's Tips & Variations:

  • Bacon Fat is Gold: Don't skip reserving the bacon fat. It's the key to the depth of flavor in the bacon jam.
  • Spice it Up: Add a pinch of cayenne pepper or a dash of your favorite hot sauce to the bacon jam for some extra heat.
  • Beyond Cheddar: Experiment with different cheeses, like Gruyere, Gouda, or even a creamy blue cheese.
  • Bun Choice Matters: Brioche buns are my personal favorite for their richness and texture, but feel free to use your preferred burger bun.
  • Rest the Meat: Letting the cooked burgers rest for a few minutes before assembling allows the juices to redistribute, resulting in a more tender and flavorful burger.
  • Make Ahead: The bacon jam can be made ahead of time and stored in an airtight container in the refrigerator for up to a week. This makes burger night even easier!
  • Perfect Pairing: Serve these bad boys with a side of crispy sweet potato fries or a simple green salad to balance the richness.

Enjoy your Bacon Jam Burgers! You've just elevated your burger game to a whole new level. Bon appétit!
