- 1/4 cup green onions, chopped
- 1/2 onion, diced
- 4 large eggs
- 1/2 tsp mustard
- Black pepper, to taste
- 2 tbsp taco seasoning mix
- Kosher salt, to taste
- 1 tbsp extra-virgin olive oil
- 2 tbsp butter, melted
- 3 cups cheddar cheese (for topping)
- 4 oz cream cheese
- 2/3 cup heavy cream
**Directions:**
1. Preheat your oven to 350°F (175°C).
2. In a large skillet, heat up the olive oil over medium heat, then toss in the diced onion. Cook it for about 2 minutes until it softens a bit.
3. Add the ground beef to the skillet, and season it generously with kosher salt and black pepper. Cook until browned, then drain the excess fat. Stir in the taco seasoning and remove it from heat, allowing it to cool slightly.
4. In a medium bowl, whisk the eggs, then mix them with the beef mixture. Spread it evenly into a 9"x13" baking dish.
