    Crispy Fried Green Tomatoes with Creamy Goat Cheese Salad

    Ingredients:

    3 large green tomatoes, sliced 1/2-inch thick

    1 cup cornmeal

    1/2 cup all-purpose flour

    1 teaspoon salt

    1/2 teaspoon black pepper

    1/2 teaspoon smoked paprika

    2 large eggs

    1/4 cup buttermilk

    4 cups mixed salad greens

    4 ounces goat cheese, crumbled

    1/4 cup toasted pecans or walnuts

    2 tablespoons olive oil (for frying)

    For the dressing:

    3 tablespoons olive oil

    1 tablespoon apple cider vinegar

    1 teaspoon honey

    1 teaspoon Dijon mustard

    Salt and pepper to taste

    Directions:

    In a shallow dish, combine cornmeal, flour, salt, pepper, and smoked paprika.

    In another bowl, whisk together eggs and buttermilk.

    Dip tomato slices first into the egg mixture, then dredge in the cornmeal mixture, pressing lightly to coat.
